What does marinating pork in milk do?
Apparently, milk is more effective in tenderizing meat than other marinades. The milk enzymes seem to break the proteins, softening the fibers and making the meat more tender. However, they will make the meat tangier, while milk keeps is not only tender but also more genuine in taste.
How do you use Kikkoman?
Kikkoman soy sauce makes a brilliant glaze for roasted or pan-fried meat, fish and vegetables. It adds shine as well as a deep, savoury flavour. Try mixing equal amounts with honey or maple syrup and brush it onto a joint of roasted meat then pop it back in the oven briefly to caramelise.

Pork chops can marinate in a milk-based marinade for several hours or even overnight. A minimum of one to two hours is recommended. Use enough milk to completely cover the pork chops in whatever container you place them in, but they don’t have to be swimming in it.
